A second brew with a slightly lower temperature. The spice of the Assam has mellowed out considerably, while leaving the flavor. I had no idea this sort of blend could be so finicky.

A strong, slightly spicy tea with a round flavor. A drop or two of milk smooths out the Assam edges. Robust.

Floral, complex, minimally astringent for a jasmine tea if brewed briefly and gently enough.

This is my first brew of every morning, unless I have some sencha from a recent trip to Japan. It reminds me of every cup I was offered when visiting schools or businesses. My method – 7grams of tea, 500ml of water at 60-65 deg C, for 35 seconds.

Fragrance from the tin is quite strong, but when brewed delicately the taste is mellow with a nice bite at the end. 160-170 degrees for 2-3 minutes maximum is recommended.
