Okami is a master blend of prized tea bush cultivars Yabukita and Okumidori. It is a superior organic Uji Sencha, made entirely of the very first harvest from the small farm in Wazuka, which also produces our brilliant MATCHA TAKARA. As a light-steamed Sencha this tea is aromatic, refreshing and well-balanced. The needle-like formed leaves give off a sweet floral-green fragrance. The clear lemon-coloured infusion has a crisp flavour with a wonderful umami taste and some pleasant astringency.

Main notes of spinach and grass, bay leaf, seaweed, toasted sweet grain.

I don’t know why Japanese green teas don’t get more love. At their best, these teas are like matcha without all the prep and labour. Maybe the price is daunting for someone who isn’t really into green tea? I completely empathize with that. If I wanted 100g of this it would be a $40 CAD investment… which actually isn’t too bad, but I’m not in a place in life where I can justify that much right now.

Anyways, to my untrained palate this Uji Sencha is one of those aforementioned best- aka you can taste a hint of Matcha goodness! Buttery, floral, crisp, bright green powder goodness… I haven’t had a proper cup of matcha since my trip to Japan over a year ago (a pedestrian cup after hiking back down the Fushimi Inari trail), but this is the next best thing!

I haven’t drank many senchas, and those which I’ve drank were low quality ones, so I can’t compare it with something good.

I’ve steped this tea with 80ºC and 70ºC and 15-20sec steps (5gr).

The 80ºC ones were grassy, strong and a bit bitter (it was like that robustness with a hint of bitterness.

The ones at 70ºC became more gentle, grassy, no bitter, with a sweetness touch. Quite good.

As a standard, I use 10g of green tea, to 200 mL of water. The temperature will vary depending on the type of tea and how mellow a flavour that you want.

Cold brewing is also an option.
