From Tea Mountain

After a long time, we were able to find Wu Yi teas that are affordable and in this context match our ideas of what the traditional Yan Cha (Cliff or Rock Oolong, as these teas are sometimes called) to fulfill. These are teas from the outer Wu Yi (Ban Yan) and partly also the inner Wu Yi (Zhen Yan) from traditional cultivars, roasted three times on charcoal. The teas are produced by one of the oldest companies in the Wu Yi area under the guidance of experienced tea masters and are traditionally packed in rice paper.

Cultivar: Shui Xian (shrubs about 50+ years old – Lao Cong)

Harvest time: spring 2016

One of the better examples of Shui Xian in my experience, at 6 years of age the roasting is well settled.

In particular, it has a very pleasant molasses aroma, complex taste, long and evolving aftertaste and a cool texture that is at once bubbly, slick and dense.

There is a mild drying bite to the tea and it carries flavours of salt, tamarind, juniper, and parsley roots among others.
