To the many that were anticipating this spring 2018 offering: your patience will be well rewarded! Similar to central Taiwan, expectations were high with this year’s spring tea offerings in the Wenshan area east of Taipei. If you are longing for a taste of spring, this is it! This tea is exuberant, joyous with a touch of sophistication. Just like sipping a bouquet of flowers! The aroma of buttered green beans with distinctive floral overtones is definitely there. Nothing aggresses the senses. The liqueur is smooth, refreshing, and very pleasant. We purchased one of the very first spring productions of Mr. Ong, our long-time partner and producer of this fine tea. As it is now customary with his teas, we’ve put our signature on this Lot 729 by very lightly baking the tea when receiving it. You see, between the time we selected the tea on the day it was made and the moment we receive it, the tea was sent to sorting to remove the stems and imperfect leaves. This takes a few days where the tea may not be stored properly and humidity may be absorbed by the leaves resulting in a dull tasting tea. Light-baking will re-kindle the delicate flavours and aroma of this tea, seal-in its freshness and add a very pleasant almond-like finish and taste. This way, the tea will keep its crisp refreshing charm longer and keep better when stored. This is our way of honouring Mr. Ong’s craftsmanship and enhancing your enjoyment of his fine tea! Don’t delay getting some: our signature Wenshan Bao Zhong has garnered a strong following through the years and we always run out fairly quickly!

The first time I opened the package, a few days ago, the dry leaves had a strong, layered fragrance with notes of steamed milk, nuts, freshly cut grass and banana. Today, I would add stewed tomatoes and coconut to the list. The complexity of aromas is impressive and it continues to be so throughout the session. From the wet leaves I get aromas of chicory, spring onion, rocket, pancakes, melon, fermented fruits and honey.

The rinse is very crisp and lively with a floral sweetness, a light citrus note and flavours akin to milk and white grapes. In later infusions, the taste becomes more grassy and metallic with a sour finish. It is delicious, but not as complex as the fragrance I’d say. One extra flavour I notice is that of almonds.

The aftertaste is strong, long-lasting and well-defined, meaning that its characteristics don’t evolve too much. The main notes are those of flowers and sugarcane, but I also notice some reminiscent of lemon ice cream for example. It is dry both in the mouth and the throat and has a slightly numbing quality to it. Mouthfeel of the liquor is creamy, thick and drying especially on the sides of the mouth.

Sipdown. This is last of my TTC teas before I move on to my Taiwan Sourcing order. Once again, a stellar baozhong from TTC. This one is a bright, juicy tea with the flavor and aroma of fresh cut lilacs and a touch of vegetation. There’s a greenish quality to it that reminds me of morning dew. Letting it cool before drinking brings out amazing flavors and intensifies the sweetness. Wish I had gotten more than 10g of this tea.

any preference between this and the competition baozhong?

Hard to say because quality varies a lot from one harvest to the next. I haven’t tried the recent crop but the competition baozhong from the Winter 2017 harvest wasn’t worth it. When it’s good, competition baozhong tends to be thicker and more robust. Its also good for grandpa steeping.
