From Taiwan Tea Crafts

A long and wet winter has delayed production by a good 2-3 weeks compared to last year. At least, there was no disastrous weather patterns this year, so this means that your patience is well rewarded! Similar to central Taiwan, expectations were high with this year’s spring tea offerings in the Wenshan area east of Taipei. If you are longing for a taste of spring, this is it! This tea is exuberant, joyous with a touch of sophistication. Just like sipping a bouquet of flowers! The aroma of buttered green beans with distinctive floral overtones is definitely there. Nothing aggresses the senses. The liqueur is smooth, refreshing, and very pleasant. We purchased one of the very first spring productions of Mr. Ong, our long-time partner and producer of this fine tea. As we did with his previous very good winter Lot 598, we’ve in turn put our signature on this Lot 616 by very lightly baking the tea when receiving it. You see, between the time we selected the tea on the day it was made and the moment we receive it, the tea was sent to sorting to remove the stems and imperfect leaves. This takes a few days where the tea may not be stored properly and humidity may be absorbed by the leaves resulting in a dull tasting tea. Light-baking will re-kindle the delicate flavours and aroma of this tea, seal-in its freshness and add a very pleasant almond-like finish and taste. This way, the tea will keep its crisp refreshing charm longer and keep better when stored. This is our way of honouring Mr. Ong’s craftsmanship and enhancing your enjoyment of his fine tea! Don’t delay getting some: our signature Wenshan Bao Zhong has garnered a strong following through the years and we always run out fairly quickly!

Another excellent bao zhong from TTC. This one is a treat for the nose. Lots of pleasant floral aromas that evoke lilac and daffodils. The taste is light and fresh with a lingering floral sweetness. There’s a grassy, seaweed note that hangs around for the first couple of steeps and then fades. Good mouthfeel and soft mineral hints appear in later steeps. This one doesn’t have the depth of body and thickness of competition grade baozhong, but is still very satisfying and delicious.

I steeped this 5 times starting at 195 F increasing the temperature a few degrees with each infusion. Steep times were 1m, 20s, 50s, 2m, and 3m.
