From Taiwan Sourcing

Our “Wild Elephant” black tea is wild-grown from a robust Assamica varietal called Elephant (象) which was imported from Burma in the first half of the 20th century to compete with Japanese black tea varietals growing in Taiwan. The original producer of this tea (Mister Guo) traveled to Burma himself to gather the seedlings from local Burmese growers and brought them back to Taiwan. I liked this tea. But I really failed to pin down the flavor notes in it. It was malty, somewhat bitter, and somewhat astringent. It also had some complex notes. I really didn’t pick them out. Today I have been going through some of the teas I bought from Taiwan Sourcing a couple of months ago now. This one was a good tea.

I steeped this tea eight times in a 150ml gaiwan with 7.7g leaf and boiling water. I steeped it for 10 sec, 5 sec, 7 sec, 10 sec, 15 sec, 20 sec, 25 sec, and 30 sec. I could have kept going but I feel like drinking something else. The tea was not done at eight steeps.
