Yellow tea is so special that it used to be reserved for the Emperors of the Middle Kingdom. In contrast to green tea, yellow tea is not processed immediately after roasting but is wrapped in paper or cloth and left to cool. It is roasted and rewrapped again at intervals, ending with a final roasting.
This yellow tea is from the region of Huang Shan (“Yellow Mountain”) in the Chinese province Anhui. It has large, wiry leaves.
