The large leaves of Iron Goddess of Mercy tea undergo a complex process of rolling and twisting, so that the tea juices can react with air and gain a unique “orchid” like aroma, and a long lasting aftertaste. This tea is truly a darling in China, maybe that is why it was lovingly given a name of Buddhist Bodhisattva, Tieguanyin, or otherwise known Iron Goddess of Mercy. As for oxidation, Iron Goddess of Mercy tea falls closer to green tea on the scale than do some of its counterpart Oolong teas.
