From Nio Teas

This is a ceremonial matcha from the Saemidori cultivar. The Saemidori is coming more and more in vogue, thanks to its light sweetness with a slight grassy undertone. Compared to an Okumidori matcha, the Henta Matcha is much sweeter, with a slightly fresher taste. Compared to a Yabukita Matcha, this tea is smoother, more delicate and sweeter. You will notice a light sweetness right away, followed by an umami note towards the end, with some notes of fresh cut grass.

This tea comes from the town of Kirishima, close to Kagoshima. The farm where this tea is grown is surrounded by dense forest and some small mountains, making it a very natural and beautiful setting to grow organic green tea.

Matcha is a taste that I haven’t yet acquired, but I’m trying again this morning. Thanks to Nio for the free sample. I cold brewed my entire 2 g in about 150 ml of water in a mason jar. I didn’t fill it to the top of the jar as I did last time, so maybe I’ll get some foam.

The dry aroma is nutty and grassy. I did get some foam when I shook the matcha! I taste notes of cream, nuts, grass, snow peas, asparagus, kale, and mild umami, with a creamy consistency and not too much dust. The matcha is sweet and has a grassy, vegetal aftertaste.

I found this tea to be lighter and sweeter than the matcha I tried last winter, although it’s still pretty intense. I think cold brewing also helps dial down the feeling that you’re drinking a spinach salad. .

NIO Advent Tea #3 A matcha was just the thing I needed this morning. It’s kinda gloomy out there and I’m tired. The dry powder smells deeply of dark chocolate The coloring is nice. As the water is poured and the matcha is whisked, the aroma changes to vegetal and grassy notes. I suck at making foam. Despite that, the foam that I did manage to create lasts quite a long time. The flavor is a bit nutty with grassy overtones. And some bitter root veggies.

Nio Teas Advent Calendar 2022 – Day 3

Matcha time! Okay, so I don’t really ever drink usucha at this point in my tea journey. For some reason it’s just not my thing, I usually only drink matcha cold with oat milk. But I wanted to be sure I could taste the matcha bit better, so I compromised by doubling my usual matcha:liquid ratio and making a sort of cold matcha cappuccino with no sweetener (usually I add a bit of maple syrup). I used a teaspoon of matcha (the whole sample) and shook it with about an ounce of cold water, then topped up to 4 ounces with oat milk.

This is quite a light-tasting matcha. It doesn’t have an intense umami flavor, more of a light and refreshing grassiness combined with creamy nutty notes. The description mentions sweetness, but I’m not finding much of that (though it could be my preparation). Mostly it’s light and refreshing with a bit of richness coming from the nuts and creamy texture, with a seaweed-like umami (more nori than wakame) showing itself in the finish. There is a touch of bitterness, it’s very slight but does bloom a bit at the end of the sip.

I could see this one being nice for the morning when you want something bright and refreshing, and not as heavy on the intense umami richness. :)
