Pai Mu Tan, also known as white peony, is a loose leaf white tea from the Fujian Province of China. Pai Mu Tan leaves are plucked from a special varietal tea bush called chaicha. Only the youngest two leaves and the bud are selected from each branch to make this premium tea.
To be selected, leaves must be very light green almost gray/white in color and covered in velvety fuzz.
White tea is a subclass of green tea. Due to its recent acclaim, however, it has been given a class of its own. The major distinction is that the buds and select leaves of white tea are merely air dried, rather than steamed or pan fired like other
teas. This minimal amount of processing can make white tea have up to three times more beneficial antioxidants than green or black tea.
