Grown in higher elevations where the chilly early mornings are ideal for the cultivation of this type of tea, it is a tea that notably reflects the immediate growing conditions (or “terroir”) of its origin. Grown in China and Taiwan, each Tie Guan Yin tea has the capacity to possess a unique flavor all its own.
Tie Guan Yin is known as “Iron Goddess of Mercy” oolong after a Goddess who is said to have appeared at a temple cared for by a poor farmer. She directed him to the location of a single tea shoot which he cared for and grew into the variety of tea plant that is used today to create this unique tea. This special grade of this oolong is processed according to traditional methods that originated in China to achieve a medium level of oxidation. Our Ti Guan Yin oolong brews a light green/amber infusion with a smooth body, sweet finish and an aroma that echoes grassy wheat fields and apricot.
How to Prepare:
Heat water (filtered if possible) to a boil and allow to cool to 190°F, add one teaspoon loose leaf tea per cup (apprx. 8 ounces). Allow plenty of room for the tea leaves to expand by brewing straight in the hot water or with a large capacity infuser basket. Infuse the tea leaves for 1-2 minutes depending on taste preference. May be infused 2-4 times.
Oolong teas are traditionally prepared in smaller earthenware or porcelain tea pots and shared in smaller cups using the pot to brew subsequent infusions. Create your own ceremony or prepare the tea by the cup. Don’t be afraid to experiment – oolong teas have an incredible range of subtle flavor profiles depending on how they are prepared, how long they are brewed, how pure the water used, etc. and yet they are hardy enough to shine through such a wide range of brewing methods. Everyone finds their own favorite way to prepare and enjoy an exceptional oolong tea.
