Produced from the Yabukita cultivar, this organic deep steamed sencha is single estate cultivated in the prestigious tea growing Village of Kasahara in Yame which is famed and highly esteemed in Yame because it is where Zen priest, Eirin Shuzui, the godfather of Yame Tea, first planted tea seeds at the Reiganji Temple.
Organically cultivated on a mountain on a small organic tea farm as opposed to the typical mass-produced low altitude cultivation of deep steamed sencha, means the tea leaves are naturally higher in quality to start with. This higher quality nature means deep steaming the leaves in a way to promote a swampy green liquor color is really not the main focus. Instead, deep steaming is conducted in a way which retains the teas character, and produces a brew which has brightness and thickness that is characteristic of how and where it has been cultivated, and how it has been processed. Blending tea leaves together is not needed, and the final drying (roasting) of the leaves is expertly done in a way which allows the natural flavor and aroma of the tea to still shine through.
The character of this organic sencha is especially well-balanced, which is evident from the sweetness and the pleasant clean & crisp astringent finish that cleanses ones palate. It is also refreshing and provides a good medley of flavors.
