This Dan Cong is crafted from 60 to 120 year Dan Cong trees growing in the middle-high elevation (1150 meters) of the Wu Dong mountains. The family harvests just 8 kilograms per season of this lovely tea from a small cluster of older trees. The is processed entirely by hand into a kind of greenish “mao cha”, then roasted carefully in clay jars, stored for a week and then roasted 2 more time, each time with a rest time. The tea despite being roasted still maintains some green character which infuses its sweet character. The roasted brown character brings some fruit and spice to the tea which really does remind one of cinnamon. There is also a really strong cream taste (nai xiang) present in this tea.
Incredibly complex and tasty tea!
