Using young tea leaves as a base, this Tien Guan Yin Taiwanese carefully selected by TheCalin is a fully fermented Wu Long.
It is slowly roasted over low heat according to an original process: three 2-minute phases to enrich its rich and complex flavor of pyrogenic notes (roasted cereals).
In China and Taiwan, this Tie Guan Yin is called Hou Zi Cai Zhai (猴子 采摘) which means “picked by monkeys”, which is why we named it Tie Guan Yin King of the Apes.
