For two hours in the morning, for two weeks of the year in the Chinese Fujian province where white tea is grown, the pluckers are in the fields at first light to catch the early morning shoots. Brewing Instructions:
One tea temple per person. Use water just off the boil and infuse for at least 3 minutes. Don’t rush – just relax and watch the leaves unfurl.
