From Tea Mountain

The Sofu cultivar is relatively new among Japanese cultivars and is still little known. Due to its distinctly floral aroma (reminiscent of jasmine), farmers often make experimental semi-green teas from it, as well as very good sencha teas. However, some may have a higher astringency, which may not always be pleasant. Therefore, we were very pleased to taste a sample of this tea this year. It has a very pleasant aroma, the taste is sweet, lively and juicy, light. The appearance of the leaf tells us that the tea went through a slight wilting, which intensified the floral aroma, which is slightly reminiscent of jasmine, linden and lilac, but also fresh cucumber or melon peel. The aftertaste remains a pleasant, attractive freshness with a slight hint of pleasant tightness. An excellent representative of this cultivar at a reasonable price.

These needles are some of the most beautiful tea leaves. They smell buttery and a tiny bit toasty.

First thing to notice about the brew is its vibrant colour and virtually no cloudiness. As soon as I drink it, the full bodied liquor covers my mouth with a creamy mouthfeel and a strong but smooth taste. It is bitter, vegetal, and very crisp. The flavours are really quite amazing. There is a decent umami and sweetness as well as notes of rocket, butter, pine, and vegetable broth.

It has been some time since I had such a positive experience with sencha and I will look for the 2023 harvest in the spring.
