From Taiwan Tea Crafts

Green tea and GABA tea coined into a single tea’s name, really?… Sounds like a clever marketing ploy, or is this a blend of some sort?… The answer is neither. It’s rather the best way to describe the hybrid process that results in this novel tea. After picking, the leaves are allowed to wilt indoors for a short while. Afterwards, they are bagged and slid into vacuum chambers to undergo what can best be described as oxygen deprived oxidation (more information on this process is in this tab below). After many hours, the leaves are taken out to be panned to stop the oxidation process and dried. The result is this beautifully curled-leaf tea which boasts several shades from green to brown and reveals a golden green liqueur. If you’ve reached that step in the preparation of this tea you would have also been challenged by its indescribable exotic aroma. Our immediate references are local fruits like our Taiwanese plums or shi jia 釋迦, a local fruit that we savour in the spring time. It is known in English as apple custard or apple sugar fruit. The name says it all! It has a creamy custard like sweetness and tangy crisp apple-like fruitiness that is sure to please. In the cup, this tea is unique as can possibly be! It is very fruity and buttery with a crisp, slightly tart, but never bitter. It’s a must try for all Taiwanese tea enthusiasts whether you like oolong, green or black teas! As it is our usual practice, we have a marked preference for spring GABA tea as opposed to other seasonal offerings – spring tea is usually fruitier and more aromatic with a smoother mouthfeel. As a Pre-Qingming tea, you are assured that this tea was made from the very first picking of tender shoots in the very early stages of the spring tea season for even more finesse to the palate and nose. This year, we’ve chosen to produce our Lot 1006 with Organic Jin Xuan leaves hoping to benefit from a smoother creamier texture. The result seems to prove us right! Lot 1006 is definitely our best yet of this particular style of tea. This tea is produced exclusively for us under our supervision by one of our long time collaborators and available only on Taiwan Tea Crafts!

Rich and sweet winter squash flavor with nuances of honeydew, sweet corn and burnt sugar. A distinctive cooling sensation, sweet like the best peppermint, coats the throat, while the body is flooded with warmth. I find myself drinking each pour quickly and with ease. A perfect match for a day that feels like fall.

This tea, like other GABAs, does very well with boiling water and long steeps. Adding more leaf creates a richer, thicker brew with nutty and buttery overtones; however, only 3g:100mL was used for this satisying final session.

Rainy day outside and I am on steep nr 4 for this tea. Very mellow pumpkin green more oolong taste type. A sweet flavor lingerst at the last sip that makes you reach for the next cup, and the next, and the next. Not one hint of bitterness. Now I don’t know what to do with those meh GABA green teas that I have in my cupboard after trying this one…This is to be re-ordered.

Gross. This one tasted like swampy water mixed with earthy turnips and yams. What’s weird is the flavor bore no resemblance to the smell. The leaves had a citrusy aroma of lemon and tangerine however none of that came through in the tea. Didn’t bother rebrewing and will likely chuck the rest of my sample. That’s how bad it was.

This is likely my last time buying a Taiwanese green. In my experience, they smell great but seldom if ever deliver on flavor.
