Pai Mu Tan (also known as Bai Mu Dan) is quite rare white tea as it can only be picked between mid April and mid May during suitable weather conditions.
The freshly harvested top bud and two top leaves are allowed to wither naturally in the sun. The natural oxidation which takes place during this withering gives White Peony beautiful, fresh flavour and velvety taste. It also causes variegation in leaves colour: from white,green to brown. Drink itself has light golden colour and flavour with delicate notes of honey, caramel and chestnut.
This tea is very low in caffeine and high in antioxidants so is recommended to be drunk at any time of the day.
