Welcome to Day 12 of our 2023 Herbal Advent.

Today’s the day when we are reminded that holiday teas don’t have to be sweet or spicy – herbaceous, savory notes are welcome festive friends too. This tea was inspired by a tea mocktail/cocktail recipe I saw Ciaran make a couple of years ago. It was a raspberry drink but it had rosemary as the garnish. And then I’ve been seeing a lot of pretty holiday mocktails where the rosemary is the “tree” in the drink, so it got me curious. The two flavors go together so nicely it had me dropping some rosemary in my Thanksgiving cranberry relish. (Result: excellent). Where will rosemary go next!?

Don’t judge a book by it’s cover! If the idea of rosemary in your tea sounds horrid, at least give it a try. I like it with a dash

Ingredients: Apple pieces, lemon peel, raspberry pieces, lemongrass, rosemary, raspberry leaf, raspberry/lemon essences

Day 12 of the Plum Deluxe herbal advent. I’m getting raspberry and apple, but not really picking up any rosemary. Too bad – that would have been cool. Pretty tasty raspberry tea, though. Not too sweet, not too tart, not too strong or too weak. It would probably make a nice tea soda but I’ve already gulped down nearly all of it hot!

Honestly I’m not sure if it’s that they were light-handed with the rosemary or that I’m not sensitive enough anymore to pick it up at a “normal” amount of inclusion.
