ORGANIC GARDEN
Located east of Darjeeling and facing the spectacular snow-capped peaks of the Himalayas, the garden of Chongtong, planted in 1869, has recently remade itself by turning toward biodynamic agriculture while continuously striving for the summit of quality.
Leaves: handsome, slightly oxidised leaves and silver needles with shades of opal green and pearly gold unleash gentle, verdant wisps accented with the floral aromas of wild carnation and eucalyptus.
Nose: exhales a superbly opulent fragrance of stewed plum, clementine and candied angelica.
Liquor: brilliant mimosa yellow; the liquor combines freshness and intensity with notes of blackcurrant jam and delicately grilled dried fruit with a hint of cedar and shiso leaves.
Then a crisp, floral scent of galanga appears, leaving behind a persistent and enveloping impression.
How to prepare this Darjeeling First Flush:
Measure out 3.5 g of tea
for 20 cl of pure, filtered water
Bring the water to a simmer (about 95° C)
and let the tea infuse for 4 minutes
