From Gnat and Bee

Seasonal organic Oolong tea with ruby red hibiscus, dried raspberries and bee balm from our summer garden. Oolong leaves from China are partially fermented, with all of the health benefits of green tea, without the bitter aftertaste. Wonderful iced or hot.

Ingredients: * Tie Guan Yin Jade Oolong tea, *hibiscus, dried red raspberries, *bee balm leaf and flower and raspberry extract. *organic
Caffeine Level: High
Flavor: Lively, full bodied, slightly grassy, fruitfully tart and sweet.
Brewing: Use 1-2 tsp. to infuse one cup. Pour freshly boiled water over the tea and let steep 3-5 minutes. Strain and add honey as desired.

We brewed this iced after spending the time gathering loose sticks from the yard after a windy storm. I added a touch (tsp) of honey to the brew and threw it over ice, which is the best way to elevate this blend. Gnat and Bee use homegrown ingredients for their blends, so I’ve learned that the best way to enjoy them thoroughly is by drinking without sweetener or with little honey. The lady love tried to make this as a “southern sweet” tea, but the notes were muted by too much sugar. The honey really allows the dried raspberries to pop and reduce the sourness of the hibiscus (which without sweetener carries the blend nicely).
