I just used the last of what I had of this spice blend from Chai-Wallah’s to make pancake syrup. OMG it is SO GOOD. Better than anything I could buy in the grocery store, and it’s really very simple. I bring some water (about 1/2 a cup) to a boil, place the spices (about 2 tsp) in a teacup (or bowl, or whatever you want to use) and pour over the boiling water and allow it to steep for at least 10 minutes. I just kept it steeping and added small amounts to the pan as needed.
In a pan, add about a 1/2 cup of sugar (I used a combination of turbinado sugar and dark brown sugar), and add a little bit of the steeped tisane to encourage the sugars to melt. Turn the stove on (medium-high heat), and as the sugars cook down into a syrup, add more of the steeped tisane (straining as you go, unless you want the chunks of spices in there, which probably wouldn’t be bad either), and continue cooking until you have added all the tisane and the syrup is a suitable consistency (keep in mind that it will thicken as it sits, so, you might want it a little runny. I didn’t keep this in mind, so by the time my syrup cooled, it was a bit more like caramel syrup than pancake syrup, but it still tasted amazing.)
BTW: I never really measure things when I’m cooking, so these measurements are approximate, eyeballed kind of measurements.

Wow, this stuff is spicy! I love that it’s called “Spice with Rooibos” and not the other way around. I opened this bag and took a sniff. The inside of my nostrils were immediately covered in some burny spicy powder. Never doing that again.
Then I cold brewed this for about 36 hours for maximum flavor extraction! After the first sip, all I could say was, “Wow, this is spicy!” I love a spicy chai! I love cardamom in my chai though and I’m don’t really taste it here. Lots of clove and cinnamon for sure! Licorice even. but no cardamom. :( Anyways, pretty tasty, but not the balance of spices I’m looking for.

I’m loving this. It is ultra-spicy! I am even liking the rooibos contribution here. There is a delicious nutty taste and sweetness from the rooibos that is distinctly rooibos … and somehow I’m liking it. It must have something to do with the way those notes play with the strong spices. It’s very nice and warming.
This is a really REALLY good chai! Bold and full-bodied. The spices are robust and zesty! I’m trying this with and without the “latte” – and it’s really good both ways, but I like it best latte. The milk really adds a nice smoothness to the strong spice.

This one surprised me! The Green Tea is perfect! The Spice is intense but works! This is very flavorful and the primary spice that works the runway is the black pepper! It’s a true and natural black pepper taste and it’s spicy-good! The Cinnamon, Cardamom, and Cloves all seem to be together in the secondary flavor. Everything is very natural tasting and I really appreciate that about this green chai! Nicely done!
I tried this as a latte today, and while it’s good like this, I think I prefer this particular tea non-latte. As a latte, it seems to bring out more of the vegetative flavor of the green tea but it softens some of the spices so it’s a trade off.
Still yummy though.
Oh yum! This is one of the best green chai blends that I’ve tasted. Well spiced. Ginger and pepper are strong here and give it a well-received kick! YUM!
I didn’t add milk to this, although it probably would be good like that, and I may have to try it with milk soon.
Preparation
If you are looking for a mighty strong Chai – give this one a go-around!!! It’ll put hair on your chest! (As my Grandfather used to say). And if it’s not strong enough as-is this wonderful company has SPICE ONLY options available and you can add as much additional spice as you want! BUT…this is might strong on it’s own tho!
That has a DARK Brown almost coffee brown-black look to it after infusing. The spices are in full force! I can taste the Black Pepper first then the Cardamom followed by the cloves, ginger and the Cinnamon isn’t as strong as the other ingredients.
This one I may try additives with…on future attempts.
BUT…this is strong and hearty! WOW! What a Wake-Up!
HAHA I I’ve never seen a chai w/ the spice named 1st:) Kinda like how I like my burgers- pickles and fried onions w/ burger.
the picture leads to me believe thats its all processed, as in through a blender. Is that the case? (I have a preference for whole/chunked spices).
